Carrot Cake protein squares

Not that anyone has asked but one of the foods that I eat regularly on the LiveFit plan (other than copious amounts of vegetables, egg whites and chicken breast) are these protein squares.

I’ve made probably 6 or 7 batches of these over the last few weeks and they’ve definitely become my go-to mid-morning snack.  I messed with the recipe a bunch of times (Add yogurt?  Less stevia?  Less baking soda?) and I think I’ve found my favorite. 

It’s not too dense, not too sweet and a perfect way to break up your morning and keep that metabolism revved. 

Carrot Cake Protein Squares
yields 8 servings
(Adapted from this recipe)

Ingredients:
1C oat flour (or rolled oats ground in a food processor/blender)
3/4C vanilla whey protein powder
2 tsp. cinnamon or pumpkin pie spice
1/2 tsp. baking soda
1/4 tsp. salt
4 egg whites
2-4 Tbsp truvia or equivalent sugar/sugar substitute (depending on preference)
4oz jar baby food carrots
4oz unsweetened applesauce
1oz water
1/2c chopped walnuts (optional)

Instructions:
1) Preheat oven to 350*
2) Spray 9×9 cooking pan with non-stick spray on bottom and sides
3) In a large mixing bowl, combine oat flour, protein powder, cinnamon, baking soda and salt. Set aside.
4) In a smaller mixing bowl, whisk together the egg whites, truvia, carrots, applesauce, and water.
5) Pour smaller bowl into larger bowl and mix until dry ingredients are incorporated with wet ingredients.
6) Stir in chopped walnuts.
7) Pour into pan and bake for 20-23 minutes. Bars are complete when toothpick comes out mostly clean, but don’t overcook.

Cool and cut into 16 squares for snacks on the go!

A serving size is 2 squares.

The texture is slightly different than traditional baked goods, but I’m a fan!

I don’t have the exact nutritional info but it’s something in the range of 100 cal, 3g fat, 10g carbs, 10g protein per serving.

Tips:
-Bob’s Red Mill makes oat flour and it’s more fine than if you blend it on your own.|
-I use the jar of baby food and then fill it up again with applesauce out of my bigger container in the fridge. Then with the water, I just add a little bit to the bottom of the jar and slosh it around to get all the remnants and add it to the mix.

I have had an insane craving for carrot cake lately. I am going to bookmark these for when I have access to a kitchen. Yummy.
